Let me tell you about this wonderful dish prepared by the locals in Sarawak, many local ethnic has this same particular dish. We have the Land and Sea Dayaks (Ibans, Orang Ulu - Kenyah, Kayan, Penan, etc and even Bidayuhs) both claiming to have this dish as one of their daily food. It doesnt matter which ethnic it belongs to, the best part about it is that WOWW!! its fantabolously-supermegadelicious! hehe..
The story goes that during hunting season or feast, cooking in bamboo is one great choice because it is clean, hygenic and no hassle as it is very easy. All you need is a bamboo and your choice of food - be it only chicken, fish or pork or you can add a little rice with the three meat as well. Leave it to cook under over an open fire and you're done! :)
My mum used to say that my late grandfather (my mum's dad whom is a native Kenyah from Long Anap) loves eating pansuh as the taste of the food cooked in it is very different from cooking in a normal 'modern' day pot. My late grandad has been living the village life style for quite some time before he passed on. I must say, the long house and the lifestyle over there IS his roots forever. Well, being food lovers, my granddad and I, that particular smell, taste and texture you get from the bamboo serves each dish so well that i must finally say, you better try it to believe it! :)

Chicken Rice cooked in Bamboo or locally known as 'Pansuh' Chicken Rice
The rice is flavoured with chicken stock and even the chicken itself is tender and soft to the bones. The taste of the rice is enriched with additional local herbs; the fragrant lemon grass and baby ginger. Love this. Its an all time favourite for me as i can only get it here in Sarawak!
Ingredients:-
Bamboo
Chicken
Salt
Ginger
Red onion
Garlic
Big Onion
Tapioca leaves
2 cups of rice
Methods:-
Wash chicken and season with salt and pepper to taste. Blend together the ginger, red onion, big onion and garlic. Then once again, season the chicken with the blended ingredients. Wash the bamboo and stuff some tapioca leaves at the bottom and add half a cup of water. Add half cup of rice and then put in the chicken and alternatively with rice then chicken again. On the top, block the opening with some tapioca leaves and leave to cook on open fire for about 40 minutes.

I had some rice stuffed into bamboo at my Aunt's house in Kuching a few years ago. It was cut up into pieces. I don't remember much about it - could this have been Pansuh chicken rice? Or something else?!

hi phyllis, i think the one u had is 'lemang'. is it sticky? its glutinous rice is it? the ones used to eat with curry. thats local dish for malays as well.
yes, I believe it was sticky rice so it must have been 'lemang'!
